Here’s Laura Bush’s secret vegetable soup recipe.

Here’s the ingredients you will need for this vegetable soup recipe:

  • 1-1/4 cups pinto beans, soaked overnight and drained
  • 1 tsp. salt
  • 1 bay leaf
  • 1 tsp. dried oregano
  • 1 lb. tomatoes, fresh or canned, peeled,
    seeded, and chopped; juice reserved
  • 2 ancho chilies
  • 1 lb. mixed summer squash
  • 4 ears corn (about 2 cups kernels)
  • 1 tsp. ground cumin
  • 1/2 tsp. ground coriander
  • 2 tbsp. corn or vegetable oil
  • 2 yellow onions, cut 1/4 inch squares
  • 2 cloves garlic, finely chopped
  • 2 tbsp. red chili powder, or more to taste
  • 8 ozs. green beans, cut into 1-inch lengths
  • 4 ozs. jack or muenster cheese, grated
  • 1/2 bunch cilantro leaves, roughly chopped
  • Whole cilantro leaves for garnish

    Here’s how to cook vegetable soup recipe:

    Cook the pre-soaked beans for about 1 to 2 hours in plenty of water with the salt, bay leaf and oregano. Remove them from the heat when they are soft but not mushy, as they will continue to cook in the stew. Drain the beans, and save the broth. Prepare the tomatoes. Open the chili pods and remove the seeds and veins; then cut the chilies into narrow strips. Cut the squash into large pieces. Shave the kernels from the corn.

    Heat the oil in a large skillet, and saute the onions over high heat for 1 to 2 minutes. Lower the heat, add the garlic, chili powder, cumin and coriander and stir everything together. Add a little bean broth, so the chili doesn’t stew for 5 minutes. Stir in the squash, corn, green beans, and chili strips along with the cooked beans and enough broth to make a fairly wet stew. Cook slowly until the vegetables are done, about 15 or 20 minutes. Taste the stew and adjust the seasoning. Stir in the cheese and chopped cilantro, and garnish with whole leaves of cilantro.

    Serve with cornbread or tortillas. A great one-dish meal if you have a garden or have just visited the Farmer’s Market.

    Peanut-Buttery Snicker Doodle Cookies

    Afternoons can be hectic even for the most organized mom; the kids are just home from school; you’re trying to figure out what’s for dinner…only to be surprised by a very lengthy phone call from your mother in law.

    And, that’s about the time your ten year old announces loudly that he forgot to tell you about the PTA meeting …which is tonight, in less than two hours…which you are expected to attend…and you should bring something for the buffet table…

    OK! What to do? Panic? Yes, that’s one option…but more realistically, you could try this simple to prepare cookie recipe, that has gotten me out of more than one jam.

    It’s so easy to make–and goes from bowl to oven to mouth in just about twenty minutes.

    It uses most of the ingredients you already have in your pantry and fridge and tastes so ooey-gooey good, you’ll be the envy of all the other PTA moms!

    Now, that’s a recipe for success, moms!

    Peanut-buttery Snicker doodle Cookies–

    You’ll need:

    • 1 cup sugar
    • 1 tbsp. peanut butter softened
    • 1/2 cup butter or margarine — softened
    • 1/2 cup shortening
    • 1 teaspoon vanilla
    • 1 egg
    • 1 3/4 cups all-purpose flour
    • 1/2 teaspoon baking soda
    • 1/4 teaspoon salt
    • 1 cup Reece’s peanut butter cups or snickers bars, or Hershey’s chocolate bar (broken up into small pieces) …any candy bar or mini candy bars you happen to have on hand.

    Pre-heat oven to 375 degrees.

    This step is very important, as cookies will not cook evenly or properly if they do not start the baking process at 375 degrees.

    Beat sugar, butter, peanut butter, shortening, vanilla and egg in large bowl with electric mixer on medium speed, or mix with spoon.

    Stir in flour, baking soda and salt. Stir in candy bar bits..

    Blend again.

    Drop dough by rounded tablespoonfuls about 2 inches apart onto ungreased cookie sheet. Bake 10 to 12 minutes or until edges aregolden brown (centers will be soft). Cool 1 to 2 minutes; remove from cookie sheet to wire rack.

    Optional cookie icing for twelve cookies:

    Double or triple this icing recipe depending on how many cookies you have baked.

    6 tsp. peanut butter, warmed, any brand, i.e. Jif,

    6 tsp. chocolate cake frosting,

    any variety, any brand, i.e. Dunkin Hines, Betty Crocker, etc.

    Blend in a bowl with spoon — spoon one teaspoon dollap on top of each cookie.

    Serve warm with milk!

    Or, cover and carry to any special event.

    Convert this into a Christmas recipe, by frosting each cookie with vanilla icing, and topping with red or green sprinkles.

    You may even use Christmas shaped cookie cutters, available from your online craft retailer, to shape cookies.

    Caffeine - I Bet You Didn’t Know This! Health and Nutrition!

    What exactly is caffeine? It is a colorless, somewhat bitter substance that is found in coffee, tea, chocolate and cola. It is also in many over- the-counter medicines and in many diet/weight loss supplements. It is a stimulant and it is considered a psychoactive drug. It is the most widely consumed drug in this country. Drugmakers are required by law to list the amount of caffeine in their product, however, food and beverage companies do not have to. The caffeine that is taken out of coffee beans to produce decaffeinated coffee is then sold to drug companies and soft drink manufacturers.

    It can be a welcome waker-upper in the morning taken in that morning cup of coffee. It also helps give some a boost to stay awake late in the day. However, the boost isn’t necessarily instant as it takes about an hour for the effects of caffeine to make it’s way through the bloodstream and into the system. It has benefits and it has side effects. It helps keep us alert. It stimulates the central nervous system. Some say it improves physical and mental performance. It has diuretic activity. Some studies list is as a mood elevator, and a pain reliever. Because of the increased alertness levels of those who consume caffeine, there has been improved performance in activities such as test-taking, driving, flying and problem solving.

    There are side effects of caffeine though. Those are insomnia, nervousness, increased tension and anxiety-panic attacks, just from drinking the amount of 300 mg. The amount that causes these side effects vary from individual to individual, however, children seem to have a lower tolerance of it because of their lower body weight. The Food and Drug Administration advises pregnant women to avoid it altogether. The FDA does list it as a “safe food additive”, even though pregnant women should avoid it. For those that take it regularly every day, going without it a day can cause withdrawal symptoms such as, headaches, irritability, a lack of energy and of course, sleepiness. These withdrawal symptoms are short lived though.

    The following is a chart and the amount of caffeine in products you use and consume daily.

    6 ounce cup of coffee - 64mg to 150mg

    5 ounce cup of tea- 40mg

    12 ounce can of cola- 40mg

    hot cocoa - 1 cup 4mg

    6 ounce chocolate bar 25mg

    2 Excedrin tablets 130mg

    Besides weight loss products and stay awake products and energy drinks, caffeine is being tested for pesticide use and it has been laced in women’s panty hose for it’s constrictive effects that are supposed to shrink thighs. Love it or hate it, caffeine is and always has been a big part of American culture and probably is here to stay.

    Saving money - is something we would all like to do. Whether you are struggling to manage day to day or earning a six figure salary, saving is something we all think about.

    How to Enjoy Your Favorite Christmas Recipes

    Christmas is a time of holiday and festivity. And delicious food
    is integral part of the celebrations. You relish food and have
    fun with your friends and relatives. In this excitement you
    hardly give sufficient attention to how much you should eat.
    There is a tendency to overeat at odd times and quite often the
    associated problems follow.

    Is it possible to enjoy our favorite Christmas recipes and have
    a control on our diet at the same time?

    The answer is a big YES.

    And this is not limited to Christmas time either. But this is a
    good time to start on the right path.

    In our busy and mechanical life we have long forgotten to pay
    attention to the subtle indications sent out by our bodies.
    While attending to the “necessities” of our lives and fulfilling
    our “obligations”, we tend to abuse our bodies. The consequences
    are there to see within us and all around us.

    Yet with just a little self-discipline this situation can be
    greatly improved. I am not suggesting skipping meals or reducing
    diet forcibly.

    Just try these simple tricks and see the difference.

    * Feel Good About Yourself - Before you start your meals get
    into a happy state of mind. Now don’t tell me it isn’t possible.
    You can always think of something positive and pleasant. The
    idea is to feel happy. Feeling happy is a habit - it is
    worthwhile cultivating it.

    * Be Thankful For Your Food - Saying prayers before your meals
    is one of the best practices created by the civilization. In all
    situations it may not be possible to go thru this ritual. But
    the least you can do is to have your meals with gratefulness in
    your heart.

    * Have a Regular Time Schedule For Eating - This point cannot be
    over emphasized. Some discipline in the intake of your food can
    go a long way in regulating your life. This may be difficult to
    maintain in the midst of festivity, and that is quite excusable.
    If you are otherwise disciplined in your eating habits,
    occasional exceptions can be easily tolerated.

    * Don’t Eat Hurriedly - Don’t be in a hurry to devour your food
    as if it is going to run away. Instead slow down your eating and
    consciously enjoy the flavor.

    * Eat With Full Awareness - While you eat give full attention to
    your eating. Don’t make it a casual or a half-hearted effort.
    This is a commitment you have to make to yourself. In fact this
    approach bears positive results with any work you undertake.

    * Chew Your Food Well - Avoid just gulping down your food. By
    chewing your food properly not only will you enjoy it, you also
    help your body to assimilate the food better.

    * Pay Attention To Indicators Of Your Body - While eating listen
    to your body. It will give you sufficient indication when you
    have had enough. Eat to your heart’s content but avoid
    overindulgence. If you follow the steps outlined here you will
    “know” when it is time to finish your meals.

    I will add one more bullet point here - have regular physical
    exercise, or physical movement. It need not be a vigorous
    routine if you don’t want it, but it should be enough to make
    you feel hungry at the next meal.

    The points I have outlined here are nothing new - they form a
    part of age-old formula which also have scientific support. I
    have not tried to suggest what food you should have - that will
    depend upon lot of factors I am not aware of including your
    particular situation and physical condition.

    But these simple tricks work well with all situations and you
    can practice it with any other remedial measures you may be
    taking. They will certainly help you to enjoy your Christmas
    recipes better.
